I needed to use up some left-over veg's I had in my frig, so I put together this dish, which turned out to be quite awesome.
2 medium sized tomatoes, peeled, de-seeded and de-cored, chopped coarsely
1 white onion diced
2 cloves of garlic diced
1 tsp - 1 tbs of Panang Curry
1 can of Garbanzo beans, washed
1/3 cup of cream
1/4 tsp sugar
1 tsp salt
1 tsp pepper
1 tsp garam masala (optional, really)
sweat the onions in the pan, c 10mins, you don't want any coloration; add garlic & curry, stir and cook for 2 minutes. Add tomatoes and garbanzo beans, sugar, salt + pepper + garam masala, bring down to a simmer, cover, and after about 5 minutes add the cream, stir, and then let simmer until it's the right consistency for you.
I served this over Barley, which was good, but you could use any grain. :p
