A while back,
Angiepen was evil enough to tell me about Alton Brown's recipe for microwave peanut butter fudge. I resisted trying it, knowing that if it was this easy I'd make it all the time and gain weight. I resisted until TONIGHT, that is, when Wiggle begged me to let him make fudge. I did, with his dad supervising, and OMG is it good, and it was SO EASY, seriously anyone can do it. It doesn't require a candy thermometer, or beating, or hard work, or fancy ingredients.
Here's the recipe (just 4 ingredients!):
Ingredients
* 1 cup butter, plus more for greasing pan
* 1 cup peanut butter
* 1 teaspoon vanilla
* 1 pound powdered sugar (that's 3-1/2 cups)
Directions:
1. Microwave butter and peanut butter together for 2 minutes on high.
2. Remove from microwave and stir.
3. Microwave on high for 2 more minutes.
4. Add vanilla and powdered sugar, and stir to combine. It takes a bit of work to get incorporated.
5. Spread into a buttered 8x8 pan lined with waxed paper.
6. Place a second piece of waxed paper on the surface of the fudge.
7. Refrigerate until cool.
8. Cut into 1" cubes and store in an airtight container. Keeps for up to a week but it'll be gone by tomorrow in my house. :P
