Back in season 2, Stefan spent an episode interrogating a chained-up Katherine. Toward the end, when Katherine got bored, she ripped the shackles off her arms and casually kicked off the ones on her ankles and stood.
I don't know why, but something about that part just shrieks volumes of how cunning, quick-witted, and cavalier she really is. It's so fun to watch. I adore Katherine.
EDIT: ALSO, DRUNK KATHERINE DANCING WITH THE LAMP IN THE LIVING ROOM.
1) After Rose dies, Damon has a crisis. And the reason I love this scene so much is because it shows how much Damon does struggle with his humanity, and how much he actually hates himself for being what he is, and how short he feels he falls from everyone's expectations. 95% of the time, Damon revels in who he is, but when he's hurt he actually displays so much pain and feels he has no choice but to embrace being a vampire, because it's really all he has.
2) Season 3, Damon attacks Bill. More importantly, when Elena tries to yell at him for it, Damon reminds her one simple, over-looked thing: "I am not Stefan. How about you stop trying to turn me into him."
I think the second season overall was better, but my favorite part came from toward the end of the first, when they were looking through the library of crystals. Majic's starting to feel a little down about being kind of useless as an apprentice, Stephanie gives him a few kind words--and in the heat of the moment, Orphen gives him some encouragement, and Majic is finally able to do a good spell. His happiness was SO FREAKIN' ADORABLE.
I also liked it when Orphen punched him in the head at the end of season 2, as per my icon. Hard not to laugh.

... I'll have to go with two.
