Making soba:
On the 7th of September I joined a soba making class held in Numzau. It was fantastic, a real international meet and greet with food making thrown in for good measure. And while I learned that I will never become the soba version of Nigella Lawson (for one thing its hard work making soba, you sweat something wicked) I did get to handle some very pretty knives.
To make soba
Get buckwheat flour
Plain flour
Water
Mix together and kneed.
Then with
Two big knives
One man called Tanaka san
Three old biddies
Two kids
3 ALT’s
And a very confused security guard
Proceed to slice and dice the dough with giant knives that make you feel like a bad ass cook.
Once your soba (in my case raman and fettuccini) is chopped, add to boiling water
Once soft, flick at your friends, get it attached in the old biddies’ hair, stuck to the roof and finally eat it.
