Bisquick Taco Pie

I've re-discovered an old Bisquick cookbooklet that my mom gave me. I made some tweaks to one of the recipes and cooked it for dinner last night. It was extremely easy AND my super-picky husband loved it, so I thought I'd share.



Bisquick Impossibly Easy Taco Pie (with modifications)

Ingredients:
1 pound ground beef or turkey
1/2 cup chopped onion
1 1.25-oz. packet taco seasoning
1 small can Rotel tomatoes and green chilies
3/4 cup Bisquick
1 1/4 cups milk
3 eggs
1 cup shredded cheddar or Monterey Jack cheese
Chopped green onions (if desired)

Directions:
1. Preheat oven to 400 F. Grease a 10-inch pie plate.
2. Cook meat and onion over medium heat, stirring occasionally, until meat is browned; drain. Stir in seasoning mix.
3. Spread meat and onions in pie plate and cover with Rotel (to taste; I didn't use the whole can).
4. Stir Bisquick, milk, and eggs until blended. Pour into pie plate.
5. Bake for 25 minutes. Sprinkle with cheese (and green onions if desired) and bake for 8-10 minutes more, until a knife inserted in the center comes out clean. Let stand five minutes before serving.

According to Sparkpeople's calculations, when you use ground turkey, this recipe comes out to about 470 calories per quarter of the pie. Not bad for dinner.
