I tried an experiment tonight, and it turned out great! I had a craving for hashbrown casserole (like Cracker Barrel's), but I wanted it as an entree. So - I added cooked, shredded chicken. It was yummy!
Chicken Hashbrown Casserole
Note: this made a LOT. Way too much for two people, even with leftovers. So, you may want to half the recipe, depending on how many people you will be serving.
3 chicken breasts, cooked and shredded in large pieces*
2 (10.75 ounce) cans condensed cream of chicken soup (I used the 98% fat free)
1 1/2 cups sour cream (I used light)
2 tablespoons butter, softened
2 tablespoons dried minced onion flakes
salt and ground black pepper to taste
1 (2 pound) package frozen shredded hash brown potatoes, thawed
4 ounces extra sharp Cheddar cheese, shredded
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2. In a large bowl, mix together the soup, sour cream, butter, dried onion flakes, and pepper. Stir in the hash browns and 1/2 the cheese. Mix in shredded chicken. Pour into the prepared baking dish, sprinkle with remaining cheese.
3. Bake 45 minutes in the preheated oven, or until cheese is melted and bubbly.
*I cooked/poached the chicken in a skillet with some chicken broth while I was preparing everything else.
