Got this recipe from a friend and made it last night - yummy! Serves 6; 7 weight watchers points per serving.
Chicken Tetrazzini
2 breast uncooked boneless, skinless chicken breast
8 oz uncooked spaghetti
2 cup mushroom(s)
2 Tbsp butter
1/4 cup all-purpose flour
1/8 tsp pepper
1/8 tsp ground nutmeg
1 cube chicken broth or bouillon, dry
1/2 cup fat-free skim milk
1/2 cup half-and-half cream
2 Tbsp sherry cooking wine (optional)
1/4 cup grated Parmesan cheese
Preheat oven to 350 degrees.
1. Cook spaghetti according to package. Drain.
2. Meanwhile, in a large saucepan cook mushrooms and green onions in
butter until tender. Stir in flour, pepper and nutmeg. Add chicken
broth and milk all at once. Cook and stir till thickened and bubbly.
Stir in the chicken or turkey, sherry, and half the parmesan cheese.
Add cooked spaghetti or linguine; toss to coat.
3. Transfer mixture to a 2 quart rectangular baking dish. Sprinkle
with remaining parmesan cheese.
4. Bake in 350 degree oven for 15-20 minutes or till heated through.
