Easy Blackberry Cobbler:
1 1/4 cups sugar
1 cup self-rising flour
1 cup milk
1/2 cup butter, melted
2 cups frozen blackberries
Ice cream, optional
Whipped cream, optional
1. Whisk together 1 cup sugar, the flour, and milk just until blended; whisk in melted butter.
2. Pour batter into a lightly greases 12x8 inch or 11x8 inch baking dish (glass or metal);
3. Sprinkle blackberries over batter;
4. Sprinkle remaining 1/4 cup of sugar over berries and batter;
5. Bake cobbler at 350 degrees Fahrenheit for 1 hour or until golden brown and bubbly.
6. Top with scoop of ice cream or whipped cream if desired.
Makes about 6 servings.
