This is my variation on a recipe I picked up off the interweb.
Olive oil
1 onion, chopped
Lamb
~1 tbsp cumin
~1 tsp cinnamon
1/2 c water
butter nut squash, peeled and chunked, no seeds
2 carrots, in chunks
1 sweet potato, peeled chunked
1 can chickpeas
1 can tomatoes
dates, chopped
peas
Heat the olive oil in tagine, add onions and lamb (salt and pepper), saute until soft and browned. Add cumin, cinnamon, squash, carrots, sweet potato, chickpeas, tomatoes and dates, and water. Bring to boil, reduce heat, cover, and simmer for an hour or so. Add peas, cover and simmer another 15-30 minutes.
It would have been good with the chopped cilantro that i forgot to add, too.
