Well, this is cute. Timing's pretty good, huh?
I actually thought about this one a lot, since I'm working on starting my own restaurant. What would it serve? Well, read my lj, but take only the healthier stuff. I'd serve a wide mix of heart healthy and diet friendly foods that normally eating people wouldn't turn their noses up at. I'd gear it toward special diets, like diabetics, low carb, and vegetarians. No vegans, though. Screw those people. I'd do the whole thing with an extravagant flair and a moderate price. Dishes like fresh gazpacho, grilled shrimp kebabs with carribean mojo sauce, and pepper salsa topped grilled tuna would dominate the menu, Nothing would cost more than 30 dollars, and the whole restaurant would be styled in a cross between a french bistro and an italian villa. Bright colors (lots of yellow, orange, and red); fresh, crisp whites; and open, well lit dining spaces.
Since it'd be such a large variety of foods all blended together in a healthy fashion, I'd probably call it "Fusion".
