I use this more as a topping than for anything else. It's great on pulled pork, it's an integral component of the rachel, and really it works on a great deal of sandwiches. I blame pittsburgh for that, a good slaw on a salad far trumps simple lettuce.

ingredients:
1 small head green cabbage, cored and julienned, about 2 inches long
1 small head red cabbage, done as above
4 large carrots, julienned
2 cups mayo (bonus points for home-made)
4 tblsp lemon juice
4 tblsp sugar
black pepper to taste

Simple. Mix it together, toss it, and chill it. This really doesn't come into it's own until you've let it sit for about 2 days, at least.

You can do a lot of crazy shit with coleslaw. Add some chipotle chili. add some ginger and chili paste, and it's thai. Toss in a bit of sweet onion and some curry powder. Really, the sky is the limit.
