Dude, so, I made the most badass banana bread last night you don't even know. Like, this banana bread would go medieval on any banana bread that tried to step to it. It's my dad's recipe (that I think he cut out of a news paper) but I doctored it a bit to have more banana and less actual sugar because, well, that's yummier.
Bad Ass Banana Bread
1 cup all purpose flour
1/2 cup wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup sugar
1/3 cup light butter (you can use regular, but why add the calories? Also margarine is gross)
2 eggs
1 tbsp milk
1 tsp vanilla
3 mashed ripe bananas (it should be about 1 1/2 cups)
~1/2 cup chocolate chips
1) Preheat oven to 350. Lightly grease a regular sized loaf pan.
2) In a small bowl, mix dry ingredients together (flour through salt) in a small bowl. Set aside.
3) In a large bowl, cream together the butter and sugar. When that's fluffy, add the eggs. Beat well, then add the milk and vanilla.
4) Alternate adding the flour mixture and the mashed bananas to the sugar mixture. Beat until smooth after each addition. Once you've added all the other ingredients, dump in your chocolate chips and mix thoroughly. Not gonna lie, I never measure my chocolate chips, because seriously, who actually wants LESS chocolate? No one in my house.
5) Bake for approximately 45-50 minutes, until a toothpick inserted into the middle comes out clean. Makes 1 loaf
