Amy seems to be one of the few companions who isn't expecting the Doctor to change who she is. Rose, Martha and Donna all wanted to travel with the Doctor as an escape from their lives. Rose was bored, Martha was frustrated with family problems and Donna hated the drudgery of everyday work. Amy already lived a pretty crazy life with a quirky boyfriend/fiancee. She couldn't really explain her life to the people she knows anyway (I'm a, um, nurse, or cop, yeah, that's it), so traveling with the Doctor isn't as world-shattering for her as it has been for some of the other companions in the new series. It doesn't feel like she's changing, so much as becoming who she actually is. I don't think she'll burn out like Martha did.
Amy isn't the first human companion to take spacetime travel in stride; I thought Harry (a contemporary of Sarah Jane's) was pretty well grounded this way too, and he didn't even have any childhood experiences Four to acclimate him to the idea. (Captain Jack handled it pretty well too, but he's not really the Everyman figure most companions tend to be.)
