Rejuvelac is good and weird.
It is a liquid made by pouring water over sprouted wheat berries (in a jar with a ventilated cover) and allowing it all to ferment at room temperature for 48 hours.
The liquid that you drain off the wheat berries has become naturally fizzy and tart. You add a squeeze of lemon juice to keep it fresh, and refrigerate it. This is rejuvelac.
You can drink it plain, or use it in place of water in raw recipes. Supposedly highly nutritious, and full of good bacteria.
I just sipped some. Not gross. A little bit good. Tastes like a really mellow cucumber soda.
