Ingredients:
1 can black beans
1/4 c silken tofu
1 sm avocado
1/2 can of ro-tel, drained
2 T minced garlic
2 t chili powder
3 T lime juice
1 t cilantro
Rinse and drain the black beans, and add them to your blender. Then add the rest of the ingredients and pulse until they are blended.
I suppose you can do vegan sour cream, but I've discovered that it has no real redeeming nutritional value, so I prefer silken tofu - it's lower in fat, just as creamy and the brand I buy adds calcium to the recipe.
