Things I do while on night shift

I have a weird predilection to complete, uhh, unusual tasks while on night shift. Something about being awake at four in morning makes me want to get up and do stuff when I do finally get up.

I've been reading Michael Ruhlman's book Charcuterie: The Craft of Salting, Smoking, and Curing and as I recent bought a snifty new Viking stand mixer, I decided to take the plunge and make my own sausage. I went and picked up the food grinder/stuffer attachment, and after a couple of weeks of false starts, finally got going on it this weekend.

So, today was the day, I had ground all the pork yesterday (5 pounds of pork shoulder, 3 tbs garlic, 3 tsp pepper, 3 tbs salt) and let it sit over night. I soaked my casings and then got to work. Here, ladies and gents, my first handmade sausage:
