Leftover eggplant, sauteed in canola oil, then simmered in (canned) tomato sauce with chicken sausage, is really good with herb greens. The sausage is not as good a part of it, though, so next time I'm going all-vegetable, with maybe mushrooms and zucchini ( Read more... )

I have experienced the joys of okra in new and astoundingly awesome ways; mostly because other people have cooked it and offered it to me. :D

I saw John Ringo at the airport bookstore and thought of this lj. O__o

Mmm, eggplant.

My favorite mode of cooking is "see whatever vegetables I have, calculate - roughly - in which order they have to go into the pan, go! Then see if I have to add anything. I've yet to get something really bad out of that, and it's really, really good pretty often.

You can also scoop out the eggplant flesh, cube it and saute it with some olive oil and whatever else you'd like (garlic, onions, herbs, etc - pine nuts work really well) and then mix it with some tomato sauce/puree/etc, breadcrumbs, cheese. Pop it all back in the eggplant boats and bake. Yummy. I have a recipe somewhere but eyeballing the proportions tends to work well enough.
