There were candles burning softly, and a
dessert left to chill. Ronan, meanwhile, was setting up a small, low table he'd acquired recently, with cushions on which to sit.
For dinner, he had prepared curry-lime chicken*, served over a spiced blend of white and brown rice with lentils, with the requisite naan bread on the side. All he needed now was his dinner date.
*Curry-Lime Chicken
Heat about a tablespoon of oil in a frypan over medium heat. Add a half-cup chopped onion, two cloves minced garlic, and a tablespoon of Patak's hot curry paste, with a quarter-cup of lime juice. Stir until onions are just translucent.
Add two diced chicken breasts, and then, after the chicken starts to brown, half a cup each of diced red and green peppers, and three or four diced mushrooms. Add another quarter-cup of lime juice, a splash of balsamic vinegar (to taste), and about a tablespoon of honey. Cook until the liquid has mostly reduced, and then add a half-cup of coconut milk, plain yogourt, or heavy cream. Reduce further until there is only a very thick sauce remaining.
Serve over rice, lentils, or a combination thereof.
