I've been on a kick to discover yummy, warming, low-cost meals lately, and this is my latest successful experiment.
Italian Sausage & Lentil Soup
Prep Time: 30 minutes
Cooking Time: 1+ hours
Serves: 6
Ingredients:
1lb bag of DryLentils
1lb of Italian Sausage Links (Variety is up to you, Hot, Mild or Sweet will work depending on your preference)
2 - 14oz Cans of Chicken Broth
4 TBSP of Onion Flakes
2 TSP of Minced Garlic
6oz Can of Tomato Paste (You'll only use half of it)
1-1/2 TSP of Celery Salt
8 Fresh Sage Leaves (Minced) or 1 TBSP of Dried Sage
1/2 TSP of White Pepper
2 TBSP of Coarse Black Pepper
1 TSP of Dried Basil
1 TSP of Dried Oregano
1 TSP of Ground Thyme
4 Fresh Carrots (Diced)
Directions:
- Rinse and Soak Lentils for 20 minutes.
- Rinse Lentils again and place in Soup Pot.
- Cover with water, add 2 Cans of Chicken Broth, Onions, Garlic and Pierced Sausage Links to pot and bring to a boil.
- Remove fat and foam from top of liquid as you stir while it boils.
- Remove Sausage Links, stir in 1/2 the can of Tomato Paste and simmer until Lentils are tender.
- Cut Sausage into bite size slices and return to pot with remaining spices & Carrots.
- Simmer until Carrots are tender, and then serve.
Serves 6, and keeps well in the Fridge for a week (I haven't tried freezing this one yet).
