This is known to me as Judi's Chocolate Cake, after an ex-girlfriend of my brother who introduced me to it. It's very easy and delicious, but sadly I haven't eaten it for years - chocolate is the one thing that triggers migraines for me. But I'd love for others to enjoy it. You mix and bake it all in the same pan. Like I said, EASY.
Use: an 8-inch round pan
Ingredients:
1 1/2 cups flour
3 tablespoons cocoa
1 teaspoon baking soda
1 cup sugar
1/2 teaspoon salt
6 tablespoons vegetable oil
1 tablespoon vinegar (yes, vinegar)
1 teaspoon vanilla essence
1 cup cold water
Sift the dry ingredients into the pan. Make two wells in the mixture and tip oil and vinegar into their wells (I'm not sure that this matters, but it's not like it's a big effort). Pour cold water over the mixture, and mix all together.
Bake in a pre-heated oven at 350 degrees F for about 30 minutes.
I recall it as moist and gooey, so a great dessert cake. Enjoy!
