We had a chili cook-off at work today. This was not one of the winners but I enjoyed it so much I asked the maker for his recipe. I'm not sure I would go to the trouble to find the bison meat...
Robert's Texas Chili
Ingredients:
3 lbs ground sirloin beef
1 lb ground bison
2 14.5 oz cans fire roasted diced tomatoes
1 14.5 oz can tomato sauce
1 14.5 oz can red kidney beans
1/2 large onion (diced)
2 packages Hard Times chili seasoning
2 bottles O'Douls (green bottle)
Directions:
Brown meat and drain liquid
Add all other ingredients
Heat to boiling
Reduce heat to low and simmer covered for 20 minutes
Now, Robert did tell me that he used only HALF of the hot seasoning in the Hard Times kit. It was mildly hot (enough that I could tell it was hot and I'm not much on hot food...it was just enough heat for me).
I've recently learned to enjoy some Mexican spices, which may be why I liked this so much...there was a definite Mexican flair to this recipe.
I had it with sour cream and cheddar cheese on top. It was a delicious lunch.
