I was baking this morning, and I thought I would share what I was making! Here's my tried and true recipe for the best banana bread I've ever had. Instead of being angry for letting some bananas go bad, see it as the perfect opportunity to make some delicious banana bread!
2 cups shifted flour
1 teaspoon baking powder
half a teaspoon baking soda
half a teaspoon salt
half a cup butter (1 stick)
1 cup sugar
2 eggs
1 cup mashed bananas
half a cup chopped walnuts (optional)
Shift together flour, baking powder, baking soda and salt. Cream butter; gradually beat in sugar. Add eggs, one at a time, beating well after each additions.
Add banana; mix well. Blend in sifted dry ingredients. Fold in nuts. Pour into greased lad pan, 9x5x3 inches. Bak in in moderate oven 350 degrees 60 to 70 minutes. Cool thoroughly before slicing.
Wow. Didn't know how old fashioned that recipe was before I actually read it. It's clipped from a newspaper, and is probably older than me. Forget all that. Mix the dry ingredients, add butter, then the sugar, then one egg, then the other. Add banana (when the dough really starts to come together), and walnuts if you want... we're not a big nut family, and have never added them.
1 cup of banana is just a guessed amount in this house.. add as much as you want, it just gets thicker the more you add. More than 2 or 3 mushy bananas, and I would probably just make a second loaf. And a hand mixer or standing mixer works best.
Cool before slicing? Yeah, right, I'm so sure. It's best when hot. Good for breakfast, snacking, or whatever.
