Then I am pleased to know I've presented you with such a useful problem.
If there is anything beyond assistance with deciding teams, do not hesitate to ask.
As for that particular question, I personally have kept a wide range of Pokemon and have done my best to keep them not only within close levels of each other, but have set a goal for each town. Hopefully to ensure I will be prepared to tackle the gym leader.
Doing this means I will always have at least one useful type available for a type advantage.
Of course, there are a few exceptions to this rule.
Those being Guile has never paid visit to the box, whether or not her Psychic type would be a hindrance.
I also like to keep a fire Pokemon handy for the cold temperatures of winter, a water type for long travels so I have access to clean drinking water, as well as both a Pokemon to ride and a flying type to send for help or be used to offer assistance should either of these instances happen to occur while out on my travels.
Then, once the new town is reached, I trade out and train those of which would be useful for the gym in town.
Or to give each of my Pokemon a chance to enjoy the fresh air.

As for being touched, again.
I am pleased to hear this.

And you certainly do not have to evolve him.
I've a Glameow who, although he's certainly a high enough level, I've chosen to keep as a Glameow.
You simply, if you want one to ride on, need to find another to evolve.
You Shinx will surely handle that for you, once evolved.
