Apple Cake

The picture above is Apple Cake with Butter Sauce. It was enjoyed with friends while watching Pirates of Penzance (my first time!). The movie was not what I expected, though I enjoyed it. The Cake was even better than remembered. It had been too long.

Pam's Apple Cake with Butter Sauce

2 eggs
2 cups raw sugar (grind raw sugar until fine, or just use white sugar. I used 1 1/2 cups instead.)
2 and 1/2 cups flour
1 tsp cinnamon
2 tsps baking soda
4 cups peeled/diced apples (8 small or 6 large)

Beat eggs and sugar. Stir in dry ingredients. Note that there is NO OIL in this cake. The batter will be VERY DRY at this point. You'll think you're a failure in the kitchen or get mad a me because I failed to give you a proper recipe. Take a deep breath. Your efforts will be rewarded. Sprinkle a little bit of sugar on the apples, then add them to the batter. The batter will be very stiff. Don't panic. The apples will release their juices and the cake will be moist.

Bake at 350 degrees. In a 9 x 13 pan this should take 40-45 mins. Serve with Butter Sauce. Enjoy.

Butter Sauce

1/2 cup brown sugar
1/2 cup raw sugar (or white)
1/2 cup butter
1 tsp vanilla
2 tbls flour
1/2 cup half and half

In a saucepan add sugars, butter, and flour. Whisk constantly on low heat until the sugars have dissolved. At half and half slowly (keep whisking) and then add vanilla. Serve immediately or cool completely before storing. Store in mason jar or other container in refrigerator. Warm in microwave or heat mason jar in pan of hot water before serving.
