Lettuce salads? We eat a lot of those around here! Most of the time it's pretty basic with tomatoes, cucumbers, cheese, bacon bits, carrots, anything else we can find with whatever dressing we like. Sometimes we'll have taco salads (with seasoned hamburger meat or pinto/black beans plus salsa, sour cream and whatever veggies we want). Another favorite is Greek salad. If we have gyro meat we'll use it otherwise we just made a normal salad, use bottled Greek dressing or make our own. Gotta have feta cheese! We'll make hummus on the side with grilled pita bread. Yum. I have a recipe for a salad from a local restaurant. It has artichokes in it. Let me know if you want the recipe. The dressing is good.
