She sounds like my mom when there is too much on her mind, can't focus on one thing or have cohesive thought patterns.

All you can do is get on with your day and hope things straighen out and that you dad is getting better or whatever is wrong is easily fixed. You will be in my prayers tonight.
Rather than try to make sense out of the e-mail as a whole, I think I'd focus on each sentence. Taken by themselves, they make sense. So pick whatever seems most important, or whatever you have something to say about, and respond to that.
Or you can just give a quick response to let her know you read it, and have the real communication when you talk to her.
Just some ideas. Do with them what you will. *hug*
