Another recipe, which is popular in Russia and good way to preserve zucchinis for the winter.
Ingredients:
- 4 average zucchinis
- 1 large carrot
- 1 sweet pepper (optional)
- 1 large onion
- 3 medium tomatoes
- 2 cloves garlic
- 3 tbsp tomato paste
- 1/2 ~ 1 tsp salt
- 1/2 tsp sugar
- 50 g vegetable oil
- Black pepper if desired
- Coriander if desired
Recipe:
In a frying pan with oil, saute chopped onion (5 min), then add carrot (5 more min). Then add finely chopped garlic. Add chopped sweet pepper. Add chopped tomatoes, tomato paste.
Sauteed vegetables are joined with chopped zucchini and spices in a large pot. Add salt, sugar, bring to slow boil and cook (typically 20-25 min) until zucchini is cooked.
When all veggies are cooked and soft, use a blender to turn it all into puree. Put in prepared jars (treated with boiling water or other means of disinfection), cover with prepared lids.
Zucchini caviar can be stored in a cool room, w/o fridge, if properly canned. Can be used as a veggie spread on bread, or as a side dish.
