wouldn't be hard, you're just talking about hooking a volume/flow meter.
granted, the information it would tell you would be totally worthless without compiling a really significant body of data: that is, without brewing a LOT of beer, and all the same type.
your variables(gravity, sugar, yeast population) would also have to be pretty close to identical each time to be really useful.
but on the other hand you'd know how much CO2 had been off-gassed by your beer.
different brews and yeasts produce vastly different amounts of CO2, and so you'd have to custom-tailor your data to multiple batches of each variable before it'd be really productive.
ultimately very INTERESTING information but the usefulness would be debatable.
now you COULD probably rig it up to some kind of sensor to let you know when it's stopped fermenting. that'd be bloody handy. you could even set up an auto-siphon system with some valves, an arduino/raspberry pi controller, and a CO2 tank so your batch auto-transfers from carboy to carboy..
few more controllers and you could even automate your bottling.
a few more and you could just simply ask the fridge for a beer and it'd crack open a cold one for you...

Do commercial breweries monitor that kind of thing?
I had thought that a certain volume of carbon dioxide would coincide with a set volume of EtOH, but I guess not?
