2/3 cup shortening
2/3 cup butter or margarine, softened
1 cup granulated sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
3 cups all purpose flour
1 tsp soda
1 tsp salt
1 cup chopped nuts (optional)
2 pkgs - 6 oz ea. - semi-sweet pieces (optional)
1 glop molasses (1 spoonful) (optional)
Prehear oven to 375 degrees.
Mix wets and then fold in dry ingredients.
Drop by the spoonful onto ungreased cookie sheet.
Bake 8-10 minutes, until golden brown.

Pumpkin Bread
2/3 cup shortening
1 can (16 oz.) pumpkin
4 eggs
3 1/3 cups all-purpose flour
2/3 cup water
1 ½ tsp. salt
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves
2/3 cup chopped nuts (optional)
2/3 cup raisins (optional)
2 2/3 cup sugar
Preheat oven to 350 degrees. Grease and sugar two 9x5 loaf pans, or three 8x4 loaf pans or sometimes I make muffins. Whatever you bake it in, grease and sugar the pans.
In a large bowl with mixer combine shortening and sugar. Stir in eggs, pumpkin and water. Blend in flour, soda, salt, baking powder, cinnamon and cloves. Stir in nuts and raisins. Pour into pans and bake until wooden pick in center comes out clean.
This time varies from oven to oven so the first time just watch and time the bread. Don’t over bake the bread or it will be too dry and burned around the edges. Sometimes the middle of mine is a little doughy.
