"Eat 400 calories for breakfast, have a 100 calorie snack, 500 calories for lunch, 100 calorie snack, and 600 calories for dinner. This is 1800 calories a day, still on the very low side for a young, active college student.
For the snacks, have fruit, yogurt, or vegetables. This keeps your metabolism going, and you should never go more than 3-4 hours between meals. Eat most of your calories in the beginning part of the day to get your metabolism going early. Eat the most when you are the most active (during the day, and not at night).
Try to get 3 servings of dairy products daily, too. The calcium helps to better your figure :) and protect against osteoporosis before it's too late. Have high fiber grain products (brown rice?) and LOTS of veggies! Limit added sugars (I think you'll do fine with this), and some fats. Don't worry about fats in nuts, olives, etc. These are good for you, and you need them in your diet. Do cut out saturated fats, trans fats, etc.
If you can't eat all of this at once, then add in 100-200 more calories a week until you work up to this. You will feel really full and uncomfortable, but give it time. As long as you exercise (but don't over-do it :) your body should have no problem adapting. Then, you get all of the nutrients that you need, you won't gain weight, and you will be super duper healthy!"
