I am also allergic to almonds and other tree nuts and I use vanilla extract mostly. My friends say you can taste a difference but they taste good so whatever!

Since I don't really even know what almonds taste like, I'm sure *I* wouldn't be able to tell the difference. Thanks for the confirmation.

yeah I mean, maybe almondless cookies are inferior but what the hell do I know?

my friends are always like 'omg pecan pie how can you live without that?' but I have no idea what it tastes like so whatever.

You can totally make pecan pie without the pecans and it is just as nom. My mother makes it for my sister, who doesn't really like pecans but likes the filling.

I'm not sure I could handle nut-less pecan pie. I like the syrupy sugary carrier medium, but the payoff is the nuts. Without them, I think it would be too sweet.

Although, I do wonder what sort of things you could add in place of the nuts and still have it taste good. Toasted beans/lentils of some sort, maybe? The texture would get increasingly bizarre, that's for sure.

Try raisins. Butter tarts are basically pecan pie only with raisins in and are nom. Maybe chopped dates instead too.

Agreed. I'm not a pie person but I could eat a whole pecan pie easily, haha. I feel like it works because of the harmony between the sweet part and the crunchy pecans.

(I just had a big slice last night for a Christmas dinner and DAMN I could use another one now, lol.)

I like nuts by themselves, but I abhor finding nuts in my baked goods. I happily live without pecan pie. And who the heck thinks it's a good idea to hide walnuts in brownies? Blegh. I am a texture eater, so anything anomalous like that is so blegh to me.

Me too - I'm cruising through a moist, sweet brownie, and all of a sudden, there's this walnut lounging there,like the king of all baked goods. Pffft.
