Pizza stone

I'm so confused. How can I make a pizza with home-made dough using a pizza stone? Most of the how-to videos and instructions I've checked say you must never put the stone in a hot oven because it will crack. They say to put the stone in a cold oven, then heat to 450, by which time the pizza stone will be "like a fire brick" and too hot to handle ( Read more... )

the "paddle" is a pizza peel.

Ditto the parchment paper recommendation, I find it makes for a crispier crust.

Yep, love parchment paper for so many things. Pizza peels seem like uni-taskers and I just don't have the space.

I make the pizza while the oven/stone are heating and then slide the pizza onto the stone.

I use a pizza screen. They're readily available via the internet. I roll out the dough, put it on the screen then add the toppings. You need to work quickly and have your stone heated. Once you're done with the toppings you just slide the screen and pizza into the oven right on top of your stone. Spray the screen with a little PAM beforehand so that the pizza doesn't stick. When it's done just pull out the screen and slide a spatula between the pizza and the screen to loosen it up and slide it onto a cutting board.

Alternatively, you can put the cold pizza stone on an outdoor grill (try to avoid direct heat) and the once you shape the dough, lay it on there and have grilled pizzas. :)
