Come to the Dark Side...we have cookies!

For once I'm not asking for recipe ideas! But I am asking about food.  (I've noticed a theme here...there's a lot of posts about food and cat piss. Hrmmm.)

After hemming and hawing about it for uh...years...I have decided I'd like to start eating vegetarian. I plan to keep eggs (which I don't have that often anyway) and dairy (again, I have a little cheese or yogurt here there, but I'm lactose intolerant so I pretty much stick to almond milk and back away sadly from cheese). However--hubby doesn't want to be a vegetarian. He doesn't mind vegetarian meals, but he doesn't want to go totally vegetarian either.

So, oh wise Hipsters in mixed households--what do you do?! How do you manage one herbivore and one omnivore, while keeping costs down?

(oh and, uh, if you have any good recipe ideas that can accomodate meat and non-meat in the same meal, feel free to share...I don't want to eat stir fry for the rest of my life, and that's all I can think of! Or good vegetarian cookbooks?)
