So with my new job, I get home about 2.5 hours later than I used to. This can make dinnertime a bit of a fiasco as far as time is concerned--particularly on Tuesdays and Thursdays, when hubs and I have evening activities

I've been making this for years and everyone I've fed it to raved over it. Best of all it's simple to make, you can't mess it up. Also, consider a crock pot. They are amazing things

Sounds yum! Does it come out super spicy? My hubby can't handle too much heat (touch of IBS).
I LOOVEEE my crockpot, but I need to work out a better morning system...our kitchen is grossly small, and with two of us in the trying to make breakfast/lunch/coffee--I used to be up an hour before hubby, but now we go to work at the same time.
Prep everything the night before, put in container(s) in the fridge, then just dump in the crock in the am. I don't function in the morning so I do this all the time.
I make this all the time and never get bored of it. I always add some garlic with the onion, and it's fun to experiment with different kinds of cheese (my favorite is putting pepper jack on top for a little extra kick).
The best part is that this makes a lot, and freezes really well - in fact I think it's even better after it's been frozen and reheated. There are just 2 of us in my household as well, and my hubby and I usually get 3 meals out of one batch of this stuff. When I initially make it, I cut up the leftovers into individual serving portions and freeze them that way so they can just be re-heated in the microwave or toaster oven.
not really a casserole, but what about Quiche? it is great any time of day so any leftovers can be served for lunch or breakfast
my go to recipe is: 4 eggs half cup of milk brick of cream cheese deep dish pie shell (already prebaked about 10 minutes) fillings
melt the milk and the cream cheese over low heat until just combined. whisk the eggs and add a bit of the warm cheese mixture so that it tempers the eggs, then combine together.
then fill the baked shell with tasty fillings (but not too ful) - I like onion and spinach with some parmasan, or ham and cheese, asparagus, broccoli, etc (great way to use up leftovers. then pour the custard mixture in to the shell and bake at 350 for about 45 minutes.
while I wouldn't have a filled shell in the fridge, you can make the custard in advance and then combine everything quickly when you get home
also - crock pots are full of win. I cook whole chickens in them, make amazing stews and chili's and have enough for me and my hubby as well as lunches (and it usually freezes very well)
