I made the world's best egg rolls this weekend. I accidentally forgot to buy cabbage, and was too lazy to thaw pork. they turned out GREAT. I'm typing out approx recipe so i have it for next time. i figured i'd post in case anyone else could use it.


Filling:
1) 3 chicken breasts, cut into little chunks
2) 1/2 t. or so of ginger
3) <1T. of granulated garlic (used dried only cuz it's easier on holden's belly)

4) 1 cup or so of the little shrimp, chopped even smaller (mine were precooked)
5) couple stalks of celery, cut small
6) 8 or so big mushrooms, cut into chunks
7) 6 oz or so of bean sprouts, chop em smaller
8) 1/4 c. or so of grated carrot

9) Couple shakes of soy sauce
10) Couple T. of oyster sauce
11) Shake of soy-vay teriyaki sauce (mixing nationalities, but whatever)

Cook 1-4 till chicken is done. Toss in 4-6 and cook a couple min. Toss in 7-11. Cook for just a min or two. Put in a bowl and chill (I was too lazy, and it was too late...chilled for only 20 min or so). Fold into wrappers. Cook in hot oil until golden brown (couple min or so each side). I used peanut oil (hotter boil point than olive or canola). Cool on paper towel. This made 20. Would have taken a picture or something, but we ate them all down so fast!!

For wrappers, what worked best:
Put a couple T. of filling along the diagonal. HAHA...just found awesome asci dork art:

Place a couple T. of filling somewhere between the center and Corner A, being careful not to add so much that it gets too close to Corners B & C.

Bring Corner A to the center, covering up the filling.

Fold in Corners B & C towards the center, making a fold that is more or less perpendicular with the bottom of the egg roll and tucking in the filling from both sides (as illustrated below).

Apply some paste to the remaining flap that is Corner D.
Bring Corner D down and seal it shut, almost envelope-like. Be sure to inspect for exposed areas of filling and to remedy that before frying. Otherwise, it spits all over the place during cooking.

I used plain water this time (rather than egg) to seal.
