I've learned some things:

There is a difference between artichokes and Jerusalem artichokes,
You should not substitute one for the other,
Kale is delicious,
Fennel bulb is my favorite ingredient in most things, including toothpaste,
I hate most decisions made about food 1945-1985,
Homemade stock is far better than purchased stock,
Seasonal dining stimulates the mind as well as the palette.
