OT: At school I learned two names of milk cow races, Holstein and frisone (meaning from Friesland in German, but I think most of the region is in Netherlands and the only German part of called Ostfriesland). How many names of meat cow races do you know?
LOL that was an absurd question, related to the fact that I learned very early in life (say age ten or earlier) that only beef meat from chianina race animals should be used for a proper Bistecca alla fiorentina. The unfortunate result is that I'm almost vegetarian, but still love to death a steak which is kept so rare it still says moo. And the butchers out of Tuscany know about it precisely as much as you do, so I don't get it unless I go back South.
