the eggs aren't necessary (and neither is the oil or salt, strictly). you can try the recipe with just water... in fact, now that i'm looking at what i posted, i wonder if i used that version, or one that uses water, eggs and oil together. hm. you might do a google search for fresh or homemade pasta and see what recipes come up. here's another one i have on my computer:

2 1/3 c. flour
1/2 tsp. salt
2 beaten eggs
1/2 c. water
1 tsp. olive oil

In mixing bowl stir together 2 cups flour and salt. Make a well in center.

Combine eggs, water and olive oil. Add to flour. Mix well.

Sprinkle kneading surface with flour. Knead until dough is smooth, 8 to 10 minutes. Cover; let rest 10 minutes.

all that being said, you should look for eggs at Rainbow if you ever go there, or one of the farmer's markets. Three Wise Hens is a small egg farm in Marin -- their chickens are all pastured and they don't debeak them. also, they lay pretty blue and green eggs sometimes :). there's a second local egg producer that also doesn't debeak, but i can't remember which now.
