a few months back, i was baking scones and muffins and biscuits every week, until i realized that gorging on baked goods all the time might not be the most healthy thing. but it sure is nice to have a freezer full of homemade breakfast things to take to school when i'm in a hurry, or to serve with brunch on the weekends, so now i've decided to test ( Read more... )

yeah, at the risk of sounding ocd about food, i actually cut out all pastry and ice cream and the like for a while. last year, i seemed to have no trouble maintaining my healthy weight with reasonable diet and moderate exercise, but i guess my metabolism is slowing again :/. so more exercise, less sweets for me.

i highly recommend the white ww if you've got it -- at first i would mix it with refined flour (like regular ww), but now i use it entirely in place of white flour, and it's great. you can barely taste it in many recipes, and it feels more fibrous and filling. i should start experimenting with vegan baking next, but the dairy and eggs seem like the hardest things to substitute effectively. i've got some recipes that involve more applesauce; i just didn't have any on hand today. what kind of fruit juice do you use for sweetening? i don't mind a small amount of sugar, but an alternative would be nice. i'd also like to experiment more with sweeteners like molasses, which is so rich and dark.

i haven't tried using fresh cranberries yet, mostly because it's harder to get organic ones on this coast (and i actually liked dried fruit a lot). frozen blueberries are another good option when fresh are out of season. i also have some pumpkin in the freezer waiting to be pureed and baked into tasty things. mmmmm pumpkin.

hee, well, i am a little ocd, but thanks :). you're probably right about the sugar crash aspect of too much sugar, hmm. i definitely get woozy and spacey if i don't eat often enough (about every three hours... it's a pain). i think i'm more a sucker for pastry and baked goods than sweets in general -- i can live without candy (though i'll eat it if it's around), but i looove croissants and scones and pie and cookies. especially in the morning, or toward the end of the day when i need a snack.

i want to try some apple-based muffin recipes, since i love apple. until recently, i was just using Fannie Farmer recipes for muffins and things, or the occasional google search -- but i'm looking for more recipes now. i'd love to see your vegan apple-oat muffin, it sounds delicious. i've got some frozen bananas in the freezer than are destined for becoming baked goods soon :).

and i'm glad someone's reading my blogs -- i need to stay on top of updating more often, but school eats my brain. i'm looking for more contributors to my food blog, so if you're interested, i can send you an invite email! both have LJ feeds, too (styleoverconten and fresh_eggs).
