i highly recommend the white ww if you've got it -- at first i would mix it with refined flour (like regular ww), but now i use it entirely in place of white flour, and it's great. you can barely taste it in many recipes, and it feels more fibrous and filling. i should start experimenting with vegan baking next, but the dairy and eggs seem like the hardest things to substitute effectively. i've got some recipes that involve more applesauce; i just didn't have any on hand today. what kind of fruit juice do you use for sweetening? i don't mind a small amount of sugar, but an alternative would be nice. i'd also like to experiment more with sweeteners like molasses, which is so rich and dark.
i haven't tried using fresh cranberries yet, mostly because it's harder to get organic ones on this coast (and i actually liked dried fruit a lot). frozen blueberries are another good option when fresh are out of season. i also have some pumpkin in the freezer waiting to be pureed and baked into tasty things. mmmmm pumpkin.

i want to try some apple-based muffin recipes, since i love apple. until recently, i was just using Fannie Farmer recipes for muffins and things, or the occasional google search -- but i'm looking for more recipes now. i'd love to see your vegan apple-oat muffin, it sounds delicious. i've got some frozen bananas in the freezer than are destined for becoming baked goods soon :).
