 I made Truffle Spinach and Cheese ravioli for dinner tonight and they turned out yummy. I didn't feel like making my own dough so I used potsticker wrappers and sealed them with an egg wash after combining some 8 oz ricotta cheese, 1/2 lb.  spinach, a pinch of salt, 1/8 tsp of fresh cracked pepper, 1 Tbsp of Black truffle puree, and 1/2 cup of parmesan cheese. Can't wait to eat the second batch.

BTW I love how my dad can compliment and insult my cooking in the same sentence; "Those things look absolutely horrid but they taste amazing, can I have some more?" WTH, Dad? WTH?
