As I said in a previous entry. I made blueberry bread so the tme has come to share it. muwhahahahaha
Blueberry Bread/Cake (which ever pan you use) One 9x9 cake pan or 2 loaf pans. Either works.
You will need: 2 eggs, 3 TBSP veg oil, 1 cup milk (any kind), 1 cup granulated sugar, 3 cups all purpose flour, 1 tsp salt, 4 tsp baking powder, 1 cup blueberries
Directions: Prepare pan(s) by greasing them with oil and sprinkle with flour. Then in a large bowl beat the 2 eggs until light and foamy, add sugar, milk, and veggie oil and mix until well combined.
Then sift flour, baking powder, and salt together in another bowl and mix. Combine the second mixture to the first mixture and stir until blended. Fold in blueberries gently.
Pour combined mixture into greased pan(s) and bake at 350 degress F for one hour. If making two loafs rotate the pans twice.
Let bread cool in pan for twenty minutes after removed from oven then turn onto wire rack to let cool completely before storing it in an airtight container of plastic wrap.
Self life of four days. Serves 24 portions.
