Feeding

I've been having some trouble feeding Vincent. When I bought him, I got some high-protein cat food and some hedgehog food. I've been giving him a 50/50 mix of the two, but he'll only eat the cat food, and I don't want him getting pudgy. At the same time, he won't touch the hedgehog food, even when I leave out no cat food to go with it; it's made of these tiny pellets, and lots of dried fruits and veggies. Today I cut up some carrots and cucumbers and fed them to him, and he ate them quite happily... now I'm curious as to what else he'll eat. I know you can't feed hedgehogs nuts, but is there anything else specific you shouldn't try to give them? What kinds of food do hedgehogs generally like?
