Itachi... It's entirely possible that he didn't see it, as much as he's loathe to admit that possibility.
As for Sasuke... well, if your team gets on your nerves and he's still laboring under this delusion, you're welcome to come work on training with me.

I heard from Sasuke that he saw it, and guy-in-black, Snape? that Itachi didn't see it.

Sasuke believes anything his honored brother tells him. Snape is a new element and therefore interesting. Itachi might have seen it. He also might not have.
We can get tired even of people we like best in stressful situations. It's an offer.
