Day two of nothing but cooking! It's a damn good thing I enjoy it so much!
Today I am making a Chocolate Mouse Cake for Christmas dessert and 2 pans of Chicken Enchiladas for our annual Christmas Eve at the Escobedos (friends, Kim & Bill, their kids and about 30 others). I think I will also bake my potatoes for the twice baked potatoes for Christmas.
A while back I splurged on a box of attachments for my Kitchen-Aid stand mixer. So yesterday I ground a nice round roast and made Cocktail Meatballs, then I shredded 5 pounds of assorted cheeses. I made a cheese ball, shrimp ball, Spinach Dip, Deviled eggs, and chopped my peppers and onions for the enchiladas. It was kind of fun using the grinder attachment. I will have to start using it for all my ground beef. I can get really nice cuts of Top Sirloin at Albertsons for $2.99 a pound. That's a lot less expensive than buying regular ground beef.
So tomorrow all I have to do is cook my Rib Roast, stuff the taters, and steam the veggies and make cheese sauce. Roel's Dad and his girlfriend along with our friends Zane and Jen will be here for dinner.
So I suppose I had better get on my broom.
