Oatmeal cake

1 c. oats
1 1/4 c. boiling water
1/2 c. unsalted butter, softened (I used mostly rice butter, but didn't have enough, so I ended up having to use 2 tbsp of real butter)
1 c. honey (I used 1/2 c. honey and 1/2 c. maple syrup)
2 Tbsp molasses
2 eggs
1 3/4 c. whole wheat flour
1/2 tsp salt
1 tsp baking soda
1 1/4 tsp cinnamon
1 1/2 tsp nutmeg
1 1/2 vanilla extract

Place the oatmeal in a mixing bowl. Pour the boiling water over the oatmeal and let it stand while preparing the rest of the batter.
In a large bowl, cream the butter until light and fluffy, pour in the honey and molasses slowly. Beat well. Add the eggs one at a time, beating well after each egg.
Stir in the flour and the remaining ingredients. Stir in the oatmeal. Mix thoroughly. Pour into a greased 9x5x3 loaf pan.
Bake at 350 degrees for about 1 hour or until a toothpick inserted into the cake comes out clean. Serves 8.
