What a day! and recipe for Bailey's Irish Cream

I can't be two people at once. I've tried and it doesn't work. But today? I was the director and the lab secretary and the morning courier and the referee. Whew! I'm beat!!

That said...

Good Things

*I got a LOT accomplished at work today!

*Kids were off from school today so I didn't have the morning rush to comtend with. I just got up on my own and snuck off to work, leaving everyone sleeping.

*Mexican food for dinner -- at my favorite Mexican restaurant. :) YUM Too much to finish, but YUM.

*COLD sunny day. My favorite kind in the winter -- at least when it's not snowing. I love it when it snows.

Going to run a few errands in the morning and then I'll have some "me" time. Also have a dentist appointment *sigh*...

A recipe because someone wanted it. ;)

Homemade Irish Cream

In a blender, mix:

1 3/4 C Irish Whiskey
14 oz can Eagle Brand Condensed Milk
1 c whipping cream
2 TBSP liquid chocolate
2 tsp instant coffee
1 tsp vanilla
1/2 tsp almond extract
4 eggs

NOTES: You can use fat free condensed milk and it still works out fine. Some people don't care what kind of Irish Whiskey goes in this but I think "good" whiskey makes it taste better. The cheap stuff ruins the taste. You can skip the chocolate -- but I know most of you won't care too. ;) I've heard you can skip the eggs without sacrificing the taste, but I've never tried it.
