This is the simple version of the recipe (because I'm all about easy some days:P). This literally takes 15 minutes to make. I make mine in this fantastic electric wok that I have. I'm sure it will work just as well in any large fry-pan or dutch oven.
COOK: Linguini
While the linguini is cooking:
Heat 1 TBSP oil in wok until steaming. Add 1 pound sea scallops. Cook 3 minutes. They should whiten.
Add peeled and de-tailed shrimp. I use about 2 cups of medium sized shrimp. Allow to simmer, covered another 3 minutes.
To the shrimp and scallops, add vegetables. On a busy night, when I want a quick meal I use frozen veggies (California Blend: Carrots, cauliflower, broccoli, green beans), otherwise add what you like. Allow to steam using the juices from the seafood as your only liquid.
When the veggies are done to taste, drain all the liquid and add alfredo sauce (canned or your favorite recipe). Allow to heat through. Serve over linguini. I like to also serve it with garlic bread.
