These are just some of my Mom's recipes. Someone from Britain asked in cooking if we could supply them with some traditionally American recipes. The one I really wanted to give, her meatloaf, got set aside so I'll need to go hunting but these should do for now.
Potato Salad
2-10 red potatoes, cooked and diced
2-10 eggs hard boiled, diced
1-5 stalks celery, diced
1-5 medium dill pickles, diced
4-20 green onions, cutup
1/4-1t celery seed
1/4-1t
cavenders 1/4-1C sweet relish
mayo to taste
Substitute the cavenders with any salt mix you like.
Green Bean Casserole
2 cans green beans (I find the pre cut work best)
1 can of mushroom soup
2t soy sauce
1t garlic powder
1 can onion rings
Mix all but 1/2 can of onion rings and bake at 350 for 30 minutes. Add additional onions and bake until they are heated up.
Chicken and Dumpling Soup
2 breats or 3 legs/thighs
1 medium onion, diced
1C shredded cabbage
2 stalks celery, diced
2 small carrots or 1 large, diced
1C corn off cob
1C baby peas
Season
1T poultry seasoning
1T cavenders (or your favorite salt mix)
2T salt
2T parsley
1t curry
Boil chicken in water for about 1 1/2 hours then add vegetables. Cook in oven for 2 hours at 250, put on stove top and add noodles till done or follow directions on bisquick box for dumplings. Add 1 large potato in the winter.
Broccoli Soup
2C broccoli florets
1T butter
2C milk
1C half and half
1lb velveeta, diced
2T cornstarch
2t chicken bouillon granules
dash of nutmeg and allspice
1T white wine
In microwave dish mix broccoli with butter, cover and microwave 4 minutes. Stir in the rest of the ingredients except the wine. Microwave 3 1/2 minutes. Sitr and add wine. Cover and microwave 5-6 minutes. Let sit 5 minutes to cool.
