okay posh recipe for toad in the hole with red onions and thyme batter.
Preperation 30-40 mins
cooking 40mins
you will need:
1 red onion cut into wedges, layers seperated
8 thick pork sausages
1 tsp olive oil
for the batter:
100g/4oz plain flour (normal flour)
1 medium egg
300ml/half pint of milk
2 tsp wholegrain mustard
1 tsp thyme.
salt and pepper.
1 preheat the oven to 200 degrees C/400degrees F/Gas five. Tip the onions into a small shallow non stick tin (about 23x30cm/9x12in). Arrange the sausages on top of the onions, then trickle over the oil and roast for about twenty minutes.
2. WHile the sausages are roasting, make the batter. Sift the flour into a bowl and drop the egg into the center and beat in the milk a little at a time until it makes a smooth batter. Stir in the mustard. thyme and season.
3. Pour the batter quickly into the tin and return to the oven for 40mins until the batter is risen and golden. Serve with steamed carrots and cabbage.
Alternatively, just roast the sausages without onion and just use any oil, veg oil will do. Then pour on batter and cook in oven, I would say on about Gas mark 6 (dunno what electric is for that) for about forty minutes or until it looks brown and yummy and ready to eat.
For yorkshire pudding, just omit the sausages, heat the oil (about 2/3 tbs) in the oven (in the baking tray of course) for a while, then pour in the batter and cook in oven for about forty minutes on Gas 6.
