Gouda..I grew up there. May I recommend a few things? If you arrive by train, come out of the station, go up 'spoorstraat', over the b ridge and down the 'kleiweg/hogestraat'..and down to the town hall (beautiful building) on the town square. If you arrive on the hour they have a 'klokkenspel' or a puppet and bells show. Well worth watching! Behind the town hall is the St Janskerk, one of the oldest churches around, well worth a look around and so is the St Catherina Gasthuis.
when I lived there, (12 years ago) Achter de Vismarkt was the best street for little shops (if you have the town hall to your back and the kleiweg to your right, its to your left and forward almost) and has an awesome shop called De Wakende Draak (with a Troll out front). Really nice owner.
On saturday and wednesday is when they had markets at the time, I don't know if that's still true. If you can go to a cheese market do it, they do the old fashioned cheese weighing thing.
Cheers!
Oh, and if you can? Have a patatje Satay on me? I miss that!
